I love overnight oats and it is such a quick and easy breakfast for the summer months! You may remember I wrote a Pina Colada Overnight Oats Recipe, if you have read my blog for a while. I felt it was time for an updated version. I have changed the recipe slightly but also in the presentation of it too. What I love about this recipe is the fact that you just shove everything into a food container the night before and then in the morning wake up to the breakfast of dreams. In the summer I love to eat refreshing and simple flavours, and this is just that! I hope you love this recipe too! Let me know if you make it!
Method
- Place all the ingredients in a large food container. Give them a good mix, place the lid on and leave overnight in the fridge. Make sure you only add 6 tbsp of the pineapple juice from the pineapple chunks tin.
- In the morning, serve the mixture into 4 bowls (or save 2 portions for the day after that we do). Add a splash of your favourite dairy or non-dairy milk and mix a little.
- If you are feeling adventurous toast some coconut chips in a frying pan for 5-10 minutes on a low heat. This provides a crunch and looks so pretty.
