One of my current favourite meals to cook that requires minimal effort is this. Salmon Edamame Spaghetti. It’s comforting, filling, healthy, delicious, satisfying…. What’s not to like? It literally takes no time so when you are lacking energy, this is the perfect one to whip up and impress with. Many meals take 1 hour – 1 hour and 30 minutes to make and this can be done in less than 30 minutes from start to finish. I love making more complex recipes when I have time but sometimes you simply can’t beat the simplicity of a great pasta dish! I hope you enjoy!
By the way, I am going to trial posting blogs on Tuesday and Thursday this week (instead of my usual Wednesday and Sunday) just to see if that works better. Method
- Cook the spaghetti as per the packet instructions, adding the washed rocket to the pan for the last minute.
- Whilst the pasta is cooking, wash the asparagus and place in a Pyrex dish, alongside the edamame beans. Pop in the microwave and cook on full power for 4 minutes.
- Meantime wash the lemon and grate the lemon zest. Juice the lemon too. Tear the smoked salmon into smaller pieces.
- When everything is cooked, place the lemon zest, juice, olive oil, salt and pepper, spaghetti, rocket, smoked salmon, beans and asparagus into a large pan. Gently warm everything together for 1 minute and then serve.
