I’ve been really enjoying healthy breakfasts lately – from porridge to granola to muesli! I stumbled on Madeleine Shaw’s granola recipe and thought I would adapt it and use whatever I had in my cupboards. The outcome was delicious! I will definitely be making this again for sure! It was too good to keep quiet about so I thought I would blog and share the recipe with you! I put lots of nutritious nuts, seeds and raw cacao in it to create a yummy and healthy way to start the day. I hope you enjoy it!
Method
Melt the coconut oil in a microwave or a small saucepan.
Roughly chop the nuts and mix all the ingredients together in a large bowl. You can use half jumbo oats and half porridge oats if you want a chunkier texture to your granola too! I recommend that!
Grease a baking tray and pat the mixture down on the tray with the back of a spoon. Bake in a preheated oven for 15 minutes at 180oC. Stir the mixture and then bake for a further 5 minutes.
Leave the granola to cool completely before storing it in an airtight container. It makes enough for many breakfasts… depending on your portion size!
I love topping my yogurt with fruit and this homemade granola. I also love eating the granola with plant based milks such as almond milk. It is a great way to ward away those processed sugary supermarket cereals and it tastes a whole load better! You can add so many interesting ingredients into homemade granola too! Making it yourself is also less expensive and more satisfying than buying deluxe healthy cereals!
