Confetti cupcakes

 

One of my best friends is getting married in just a few weeks time. For her hen party, I decided to make some cupcakes to add to the girly weekend. I went for confetti style and kept the flavour a simple vanilla as this is always a crowd pleaser. We were going to have an outdoor picnic but the weather got the better of us! However, we managed to grab a hotel room early and have an indoor gathering, including homemade quiche, humus, dips, fruit waters and various other nibbles. I love baking for other people and found these cute cupcake cases on Amazon to make the cakes look extra special. I love the lace like finish on the cupcake cases and have some left so no doubt I will be using these again for my next baking session!

Recipe (makes 12 cupcakes)

  • 1 tsp baking powder
  • 175g self-raising flour
  • 175g caster sugar
  • 175 butter at room temperature
  • 3 eggs
  • 2 ½ tsp vanilla essence
  • ½ tbsp. milk

Butter icing

  • 370g icing sugar
  • 185g butter
  • 3 tbsp. milk
  • ½ tbsp. vanilla essence (the more vanilla the better in my opinion)
  • sprinkles

Decoration

  • sprinkles
  • mini fudge pieces

Method

  • Preheat the oven to 170oC
  • Cream together the butter and sugar.
  • Slowly add in the eggs, milk, and vanilla essence so that the mixture does not curdle.
  • Fold in the flour and baking powder.
  • Line a 12 case muffin tray of cupcake cases. Use an ice cream scoop to dollop the mixture between the cases. The cupcake mix should fill about 2/3 of each case.
  • Bake at 170oC for 20-25 mins. They are done when they are golden on top and are bouncy to touch.
  • Leave the cakes to cool completely on a wired cooling rack.
  • When the cakes are cool, use an electric whisk to beat the butter until light and fluffy. Then add the icing sugar and beat until creamy and combined. Next add in the vanilla and milk and beat until a desired consistency. Stir in as many sprinkles as you wish.
  • Ice or pipe each cupcake and decorate with sprinkles and mini fudge pieces.
