I fancied trying out coconut milk with overnight oats and thought why not create a mocktail at the same time? Who needs an excuse for an extravagant start to the day? I love easy breakfasts and this is a just “get it out of the fridge and eat” sort of dish – the best! Perfect for the busy week and also very yummy! Coconut milk is low in calories and tasty too. If you don’t like coconut this isn’t for you but I absolutely love it. This breakfast is very healthy too and with so little effort to make it’s a no brainer. I hope you enjoy!
Recipe (serves 2)
80g oats
160ml coconut milk
1 ½ tbsp. honey
3 tbsp pineapple juice
3 rings of pineapple cut into 8 pieces
Decoration
2 rings of pineapple
Equipment:
storage container
2 bowls
Method
- Combine all the ingredients in a storage container and leave covered in the fridge overnight.
- Serve in two bowls with a slice of pineapple on each.
